When changing weight goal it should pop up with the suggestion of keeping your old goal date or use todays date. But it doesnt it can be comfussing....
go to Nurtition & body Goals on your app and changing in it back to whatever date you want.
It should be an option when you set a new goal. please help out fitbit other apps give you the option

Updating to the latest version of the App also helps resolve glitches and have the best experience of it, you can do this on your App store. Also, can you please attach some screenshots of the window you see at the moment you want to edit this information?
