My Versa 3 was three minutes behind my wife’s Fitbit and national reported time yesterday

Thanks for the detailed information. As you may know, your watch will update the time based on your time zone and after syncing to the Fitbit app. If you haven't done so, please double check if your time zone is still correct on your profile. To do this, I'd recommend this help article.
Additionally, please give a try to the following:
- Forget your Versa 3 from the Bluetooth settings.
- Force quit the Fitbit app and reboot your phone.
- Restart your watch to refresh its performance.
- Open the Fitbit app and pull down on the screen to force a manual sync.
- Wait a few minutes and check the time on your watch.
