it is quite possible that your activity in the “Days per week” category was due to the 3.6 update for the iOS Fitbit app. If you read through the threads here that particular update was crashing on people yesterday at a large scale. It’s great to see you have the newest 3.6.1 version installed now and hopefully you won’t experience that problem anymore. My theory is that that eventually your data will catch up because of the issues experience yesterday or sadly they might have been lost in the troubles yesterday. Again this is just a thought.
