When selecting to view a previous day's activity, the info for steps, sleep and weekly exercise stays on the current day.

Why is it not showing All info for each day ?

Welcome aboard to the Forums @DJ1959! This is an expected behavior. The Dashboard will only show you current day's information. If you want to see previous days data you will need to tap on the tile where you want to get more data from. You can get more information about it in @DerrickS's post here.
