How do I set up two fitbits on my android phone(charge3 and ionic fitbits).  I was thinking it would automatically change between the two fitbits

Sorry, but you cannot have two smart watches on the same account.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
