Hello there and welcome aboard to our community @fifersheep. Interesting post my friend. I use religiously my Android and on my end everything is working with the latest update of the Fitbit app. Can you share some screenshots to have a better view of the issue you are experiencing? I can share with you some ideas to fix the problem.
In the meantime have you tried to log out from your account and reboot your phone? If not, this will fix any issue your app is having after the update.

I was having the same issue when I discovered that after disabling my "blue light filter" app, the issue went away and I can scroll/edit the fields I need to. There may be an app you're using that's interferring with the fitbit app.
