My new Alta HR I purchased today will not let me set my date of birth. I keep having to tap endlessly to 1951 in the calendar but after pressing the set button after many tries it revert back to todays date.

Regarding setting your birthdate:  to avoid the tedious tapping to get the an older year, simply tap the year shown on your Fitbit and you’ll get a drop down menu to choose your year.
