So I'm working with a dietitian to track my weight as well as activity and calorie intake, I've noticed on some other trackin,g programs that you can export your data in a PDF file, is Fitbit capable of doing that or not.

@BlueKnight, the Fitbit is not capable of printing your data to a PDF file, but you do have the capability to export your data to a CSV or XLS file.  On the Fitbit.com Dashboard, open the Settings window and select Export Data:

So I am aware that Fitbit does not download in PDF, further they only export in the formats you listed below, however for the past week the program will no longer download, I was able to download once and now I get stuck in a loop for over 25 minutes with no download and I have tried since Friday, Its not on my end as I can download my complete medical records from the VA of all places in less then 20 seconds.  I filed a report with Fitbit last Friday and of course no one has contacted me to see if the problem has been fixed as they stated they would and it has not, it may be account specific but no one has reached out to me.
