Hello @Shortie284, it is nice to have new faces in the Fitbit Community! in this case you are not experiencing any issue since this is the intended behavior of the app.
In other words, your Dashboard using the Fitbit app will allow you navigate through previous dates for the main stats only. This is tile that contain your steps, calories, floors, distance and active minutes
However by navigating through previous dates it won't affect the secondary tiles, like sleep, water or your hourly goal tile. In order to access to more in depth data for these tiles, is require you access individually to see your previous history.
