My ionic hasn't synced since the app was updated on Sunday. I have uninstalled and still not syncing. Not receiving any notifications on ionic from Samsung 9plus.

Thank you for sharing those details and also the steps that you have tried to get your Fitbit to sync and receive notifications.
In this case I'd like to recommend that you try following both, this syncing troubleshooting article and this one for notifications. While you have already tried some of the steps shown in them, please try following all of the other suggestions.
In addition to that I'd like to ask what Android version is it that your S9+ is running. Is it Android 9?
If your phone is running Android 9, then let's try to turn off Background Restrictions/Limitations: Phone settings > Apps & Notifications > Fitbit app > Background restrictions or Background limits.
Then, disable battery limitations:
- Go to Settings > Apps > Fitbit app > Advanced > Battery > Battery optimization
- Change view to All apps
- Search for Fitbit app
- Choose Not optimized
That should help so that everything starts working correctly with the syncing and notifications.

The situation is now worse and very frustrating. I unlinked the watch and it won't link with the app. It provides a code and proceeds with check mark and then it continues to search. Obviously there is something wrong with the app if you are seeing multiple users having issues.
