I reset my charge HR since it didn't sync for 5 days. Online it says it will keep the stats for 7 days . When I finally got it working, it didn't show the past 5 days worth of steps. Is there a way to retrieve this information? Normally I would be okay with it but we are doing a walking challenge at work and i average 19000 steps a day.

Hello @Lvelkcr8z, welcome aboard to the Fitbit Community. Have you tried any other additional steps beyond the restart?
You are correct about it should save your information. All trackers have the ability to store at least 7 days of detailed minute-by-minute data. Summary data (calories, distance, and steps) will be stored for the trailing 30 days. If you wait longer than 7 days before syncing, you may only see the most recent week's detailed data.
However if you are not able to see even the summary data, I'm wondering if you paired your tracker again on your account or the battery drained out completely? Only on those scenarios is possible to loose information from your account and there is no way to recover the data.
You can manually log your exercise to average the amount of steps, but if you are participating in a challenge manual activities won't count for your total count. The following post will provide you more details to log manual activities from your Fitbit app.
See you around and hope this information helps!
