I completed a walk on Saturday and used my mobile to track it...No problem. Did another walk on Sunday, much the same distance, time of day etc hit the pause/finish button upon completion as per normal and the activity hasn't shown up. The number of steps tracked for the entire day seems correct. Why would this be?

Hi @scubadunc
If your phone's battery charge falls below a certain level, non-essential features may be switched off. GPS functionality is one of these features. This is true of both iOS and Android devices. It may be that your phone simple decided that the battery was too low to be "wasting" power on its GPS capability (saving it for more "important" things, like making/receiving calls, for instance). In this case, the route you took on your walk will not have been saved to the FitBit app, although the steps will have, since they are measured by your FitBit device rather than your phone.
You can alter this battery saving behaviour in your phone's settings app, usually under "Battery" or "Power" settings, depending on the make and model of your phone.
Hope this helps you out.
Regards,
Ash

Unfortunately this isn't the case. My phone was at 93% charged as I charged it the night before and I checked this before I went for my walk. Any other ideas?
