I would like to see my oxygenlevels during the night with numbers and not a graphic were the color changes. I want to know how low or high. Yes fitbit app says...about 93 overal in the night.
Is there another app to use on the pixel 2 that gives more info? Or an app that measures when you want?

Currently, there isn't a way to see the individual SpO2 nighttime readings or real time SpO2 levels on any Fitbit devices or the Pixel watches. I also haven't seen any apps that work with the Pixel watch that would provide SpO2 readings, either.

So the only way is an oxy ring. Which are expensive.
Before my pixel2 watch i had a OnePlus Watch. He had it in him. Showed graphic, max and min and when you wanted level at that moment or during the day. And a very good battery, but that was all 😂. Not a great watch apart from that.
But then i got a pixel phone and the watch came with it.
As i also got apnea i just want to know.

You're welcome, although I wish I had a more optimistic answer for you.
You might want to consider adding your vote and comment to this feature request in the Product Feedback forum: Check SpO2 at anytime on supported Fitbit devices (<-- click link). I understand the developers monitor this forum for feature requests in consideration of future updates.
Hopefully, this is a feature we might see enabled on our Pixel watches in the future.
