To disable background sync:
Tap the tile which displays the tracker in the Fitbit App (phone), it may be required to do this once more. On the devices settings page it's possible to turn of the background sync.

Welcome to the Community @mikkimouth2408! If you are using the Android app, you can prevent your tracker to sync automatically by tapping on your tracker picture in the main dashboard, tap it again, and deactivate the "All-Day Sync" option. Once you have done that your tracker will stop syncing unless you open the Fitbit app or force the process.
I hope this clarifies your doubt. Let me know if you have any other question.

My "all-day" sync feature is turned off but my Charge is still (somehow) syncing all the time. My dongle is at my house (and doesn't even work at this point) so I'm not sure what's going on.

And yet mine is all turned on for auto syncing and I manage to get it to sync every 3 days at best and I can’t even sync it to my iPhone manually.

the only way I can prevent this from happening so far is to turn off bluetooth, which is not logical or acceptable.
All I can say is, my next device will not be coming from FitBit.
