There have been several mornings when I awaken and try to update my sleep log when the message received indicates that the server denies update. Why? I have attempted to update my weight goal. This has been unsuccessful. My linked device is a Samsung 10+ cell pbone.

I appreciate that you shared the phone model that you have. It's pretty weird that you're seeing that the server denies the update.
I would like you to log out from the Fitbit app, force quit it and log back in. After this, check if you're able to update your sleep log and weight. If you keep receiving this message, please attach a screenshot to your next reply.
