I can only use alexa when I am home connected to my wifi... Is it possible for the watch to connect to my phone data? I am carrying both devices around and they are connected via Bluetooth... it should be possible.

The watch connects to your phone, the phone connected to the Internet. Your phone should be able to connect through WiFi or Cellular.. 

The watch and the Alexa app doesn't care how the phone connects to the Internet.
