For reference I have a Fitbit Versa and a Samsung Galaxy S8.
When the app update was pushed on 8/23/18 it resolved most of my issues. However at some point today at around 1pm CST I started having sync issues on and off until about 6pm when it wouldn't sync at all. I have tried all the troubleshooting recommendations made by Fitbit. I even unpaired my device and now it won't connect/sync at all upon trying to re-pair the device. Someone please advise!

Thanks for going through all of the recommendations to get your Versa to sync.
In this case I'd say that it is possible that the connection was corrupted so let's try to restart the connection from scratch. Go into your S8's Bluetooth settings and look for your Versa in there. Remove it from the paired devices list and then run the setup again as if it was a brand new device, that should do the trick.
