I see a lot of people have the problem with the Blaze pausing itself during workouts. I don't totally understand how the tracking works, but the totals are significantly lower when it's paused itself than when I stop the tracking at the actual end of the workout. I figured that it still knows my heart rate and all that and would fill in the gaps, but it doesn't seem to. Is it best/most accurate to just let the Blaze go on it's own and not use the "workout" feature? I'm not sure what the end differences are between letting it track as usual and setting it to "workout", but the "workout" mode is wholly unreliable and rather frustrating.

I've used myself the Workout function on the Blaze several times and it has never paused itself during the session. This could be because of the type of activities that I do. Have you noticed any specific behaviour on the tracker when it auto pauses that could help you identify a pattern and see what could be causing your tracker to pause itself?
Some users have reported that while doing kickboxing, the tracker rubs against the gloves causing it to pause so, something similar could be happening here.
Now, when you talk about the "Normal tracking" I can assume you're referring to the SmartTrack feature which automatically recognizes your activity. This one can be a little tricky because you need to be active doing the same activity for at least 10 minutes for it to automatically recognize it but you can try out both and see which one works the best for you.
In any case, it's always safe to restart it if you notice something not going well. For that, just press and hold the left and lower right buttons for 10-12 seconds and your tracker should reboot itself and then you can try it out and see how it goes.

I figured the fitbit knows my height, weight, age, gender, and heart rate, so it should be able to track calories in either mode. Is there a difference when I tell it that I'm lifting weights and when it's just left alone on my wrist while i'm lifting, other than perhaps it displaying "active minutes"? I have no idea what makes it pause, no gloves or anything.

Totally @polytones, your tracker knows all your personal information but since it's divided in time frames, the time frame that you choose to track manually from your Blaze could vary from the time frame it will track with the SmartTrack feature because of the time it will take for your tracker to determine that you're indeed exercising.
I normally use the manual option and go from the Blaze into the exercise shortcuts and choose Workout and start my activity but for any other activity that I don't really need to have a time frame log for it, I just let it auto detect it. It would be matter of noticing what could be causing your Blaze to stop for you to be able to use it without any problem.
