I have tried to scan many items for the food tracker, each item I scan several times each say "not Found" I have used the light and turned it off, the bar code is very straight. is this an error, or am I actually doing something wrong - I am just holding the camera over the Bar code it cant be that hard to do?

A warm welcome to the Community @Roscommoner! Thanks for the troubleshoot that you've done. I would like you to confirm that you're using the US food database. If an item still won't scan, tap the X to exit the scanner and search for the food. If the food item does not appear within the search results, create a custom food by tapping Custom > Add Custom Food.
You can double check you have the US food database by doing the following:
Also, double check that you have the latest version of the app which is 2.61 for Android and 2.42 for iOS.

So the barcode food scanner only works for a US Food database? So being located in Australia it won't work here, with our foods??
