Why in the last 2 weeks do I always need to log in with email and password on my Fitbit phone app? Never used to before as it has always gone straight to the dashboard when I pressed the app icon?

Are you using the iOS app? If so, there's an ongoing issue with being logged out. Keep an eye on the following thread that has the latest updates from fitbit:
