I don't see horseback riding listed as an activity. What would be the closest one to it and will it ever be an option?

I would choose Horseback ridding @Haitedofcourse
Put your tracker in workout mode during your ride. After a sync go to the workout event and reassign it as Horseback riding.

To manually log this activity, you just need to do the following from your Fitbit app:
1. Tap the "+" icon
2. Tap Track Exercise
3. Enter your information
4. Tap Log It
5. Sync

@Haitedofcourse you can track what you want to,, since you want to track Horseback riding I would yup in Horse then tap on Horseback riding in the popup.. This is in my screen shot above. See http://help.fitbit.com/articles/en_US/Help_article/1144/

@Haitedofcourse As our friend @Rich_Laue mentioned, you can track this exercise as you prefer. But I recommend going to your horseback riding and then just log it.
