All your personal data is held on the fitbit servers rather than the Blaze so you don't really need to do anything. The only data on the Blaze will be the tracking data (steps etc) since the last sync.
When the new owner creates a fitbit account and adds the Blaze it will remove that tracking data and reassign it to their account. At no point will they have access to your data.
You can remove it from your account although there's no need to do so. Go into the account section of the app (the icon looks like an ID card) and select your Blaze. Scroll down and you should see an option to remove it from your account.

Do one last sync, turn the Blaze off, and remove from your Fitbit account as @SteveH explains.
That last sync will remove your current step data.
