How long does it take to sync? I let it go completely dead and now it won't sync with my phone.

it really depends on how dead you are. In your case it shouldin't take too long try contacting Fitbit support

Normally, it shouldn't take more than a couple of minutes for your tracker to sync to your phone. If you're having problems with this, I can recommend rebooting your phone and also restarting your Blaze. You can easily do this by pressing the left and lower right buttons for 10-12 seconds. This will make your tracker to reboot and after that, it should sync without any problem.
