All of my information has been deleted since I updated my apple software. How do I restore it?

That sounds odd as all your data is held on the fitbit servers rather than on your apple device so should not have been affected by an apple software upgrade.
Are you sure you have logged on to the same fitbit account in the fitbit app after the upgrade as you were using previously? Using a different account would give the appearance of the data going missing.
If you are sure you are using the right account then it's probably best to contact customer support as they will be able to look it from the server-side. You can contact them via: contact.fitbit.com
