As active duty navy I go out to sea frequently. One thing I have discovered is that if my fitbit dies I can't adjust the time till I have service again. Nor does it track any of my usage. I think having a way to manually adjust the time on the watch it self would be very helpful. I know I'm not the only one on my ship that has this problem.

I can see the problem. The clock is reset when it syncs and to sync it has to connect to the fitbit servers.
There seem to be a number of feature suggestions to allow for syncing without internet connection. I found this one which you might like to vote for but note the comment from fitbit that they currently have no plans to change the way it works.
Out of interest how long are you offline for? The Blaze only has enough memory to store detailed data for up to 7 days between syncs. After that it holds data at a daily summary level for up to 30 days. After that it loses data. Does this not present any issues for you?
