A more general question is how to calculate calories/effort for workouts that are not one of the exercise option. I.e soccer/basketball/tennis/skiing/snowboarding and so on.

Welcome to the Community @DmitryZ. It would be great to have more exercises included in the list of workouts. You can check this Request, vote for it and leave your comment. Now about the exercises, you can manually log them by doing the following from your iOS Fitbit app:
1. Tap the exercise tile.
2. Tap the timer in the top right corner; this will take you to the Mobile Run screen.
3. Tap "Log" at the top of the screen.
4. Log your activity.
