I am waking up multiple times to attend to my baby. My sleep seems to record just fine, but it will split up into different days if I wake up in the evening.
Example of how it records Sunday night - Monday :
If I am in bed from 9:30pm - 6:00am, even if I get up multiple times throughout the night, it will record something like this:
Sleep from 9:30-11:30pm - this sleep tracks as part of Sunday sleep
Sleep from 12:30-6:00am with wakings - this sleep tracks as Monday's sleep
Is there any way to change my settings so the first part of sleep will show up on the correct day (in example, should be part of Monday's sleep)? Maybe Fitbit is not good at tracking sleep deprived new moms 😞

I'm sorry to hear that your Blaze seems not to be recording your sleep all together but in chunks.
I think this has to do, as you mention, with the fact that you're waking up multiple times during the night. I'd say this creates a conflict in the sleep calculations and that's the reason why it opts divide it for the two different days.
I could probably recommend changing the sensitivity on your tracker to see if this makes any difference. For this, go to the account section at the top right corner of your dashboard. Here, scroll down to Advanced Settings and in the sleep sensitivity part, change it from normal to sensitive, sync your tracker, try it out and see how it goes.

@arparkerYour post brings back many memories...and those are now in their 50's....
I have a similar issue and occasionally Fitbit breaks up my sleep for my late night bathroom breaks. I have found if I delete the 2nd log and edit the 1st with the end date of the 2nd it works and I get a correct sleep time graph, even on overlapping days. Sometimes I have to sync to change the resulting graph from "simple" to normal. Very rarely it will only give me the old style simple graph.
Here is an example with the circled area showing a bathroom break and obviously restless after that. This is a joined graph with the method above and showing the "awake" times which I wasn't aware of..
I hope the suggestion by @FerdinandFitbit works because having to edit every morning isnt a task I would welcome but if it gives the correct results it's worth it.
I have found the sleep graphs correct and a welcome adjunct to my health routine..
