My Fitbit Charge 5 started forwarding the correct time ahead an hour after I took it off the charger. It has done this four times and each time I have to go to my phone and resync it after I just did it, and it doesn't show that I have synced it at all. Is there any way to make my Fitbit not do this every time I charge it?

I'm sorry to hear that your Charge 5 keeps showing the wrong time whenever you charge it. I understand your concern, I will do my best to help you with this!
I'd say this is sort of an expected behavior, do you allow your Charge 5 to run out of battery? Do you sync your device before charging it? Please keep in mind that your Fitbit device may show an incorrect time if it hasn't synced or has been unpaired from your Fitbit account. Your Fitbit device uses the time of the device you're syncing with. Since you've recently recharge it, maybe your Charge 5 just needs to sync to update the time.

If the issue is still not solved, but you can confirm that your Charge 5 is syncing, I recommend changing your time zone to a completely different one, sync your device, put the correct time and sync again.
