There are three versions of exercise modes: on the Android app, on the desktop Windows 10 login, and on my Fitbit. I chose five of them from the app but they don't show the same on my Fitbit. How to get the ones I want on my Fitbit?

How about setting an Exercise Shortcut for Workout on your tracker and then editing the name later in the App?
To do this you to your profile picture in the App on your phone, then Charge 5, then Exercise Shortcuts. Swipe left to delete one you don’t use, then select Workout or something similar from +Exercise Shortcuts and then sync your Charge 5 to load it on.
When you’re ready to exercise, press Start and then Stop at the end. When you go into Exercise in the App on your phone you can change the name by tapping the arrow in the top right to Categorize Exercise, then enter the exercise you want in the Search Box.
I hope that helps a bit.
In my case, my studio classes at the gym auto-recognize as aerobic exercise and I edit them later. I only need to use the shortcut for Run.

I previously read the manual. With my Charge 5, on the latest version, I can't choose to start aerobic exercise, only interval, bike, treadmill, weights, & walk. Yes, it may track my heart rate, etc. during aerobic exercise but I can't start it specifically. For clarification, the app on my phone says it auto recognizes walk, run, outdoor bike, elliptical, sport, aerobic workout, and swimming. Thank you for the manual reference.

To edit an Exercise, tap on it and either rename it using Categorize Exercise as above.
If you want to edit the start and end times (I usually do because it doesn’t include the cool down often), tap the 3 dots at the top right corner, then Edit Exercise Details, then you can adjust the times by tapping on them and moving the dial.
Press Done when you’re finished.
