No steps registered on my diet app for yesterday- despite syncing. Where can I see the steps on for previous day rather than just that I did over 250 for at least 7 hours of the day?

To better assist you, may I know if your Charge 5 is new? If so, when did you set it up? Did you link it to your Fitbit app before this incident with your data? To make sure your Charge 5 is syncing properly, please go to your Fitbit account, tap the Today tab > your profile picture > your device image.
If by any chance you're running into syncing difficulties, please see Why won't my Fitbit device sync?
