Unfortunately the link you provide gives no detail whaetever about epxorting data. It seems to revolve around methods of looging food and so on.

Choosing a limited period such as this month/last month etc, produces only the following data: date/weight/BMI/Fat, and nothing else such as sleep hours, atrial fibrillation stats etc. What do I need to set to obtain that information for a limited period?

There is no easy way to print this out or forward this information to your doctor.
