I do a lot of strength training, using bands, squats, an less weights. I'm not sure what option to use when tracking or entering this activity? Any tips would be greatly appreciated.

"Workout" is good for anything that doesn't fit exactly. Assuming you are talking about using the Exercise App on your wrist, that category is mostly just for your own future reference and, in some case, to tell which stats to show in the exercise summary.
