Charged my watch last evening, looked all ok when heading to bed. This morning wouldn't sync. Have restarted watch, phone and updated app. Still no last night's data. It's syncing this mornings data ok , just nothing from overnight

This help page has the recommended steps to use for editing your sleep log in the Fitbit app (<-- click link).
If your Charge 5 tracked your sleep, you should see the data appear when you edit or manually enter your sleep start & wake times.
By any chance, are you also having issues with heart rate tracking? Do you see the green light on the back of the Charge 5? The green light is the heart rate sensor and it is needed for sleep tracking. To check the sensor, place your finger across the back of the device. You should see the green light when you lift your finger.

Thanks for letting us know that you're getting sleep data again.
Have you tried to manually enter a sleep log for the night you're missing? If your Charge 5 tracked your sleep, I think it should show up when you manually enter your sleep start & end time.
