I use a rollator when I'm out and about, and often my fitbit will start randomly tracking biking. I always dismiss the alerts, but then they appear in my workout history as "mountain biking" and no matter how many times I go in to correct that I'm simply walking, the edits won't stick. has anyone dealt with something similar and found workarounds?

It's been known to happen since Fitbit interprets the motion and tries to fit it with the best auto detect exercise. When I'm pushing a shopping cart it thinks I'm on a mountain bike. I do try and correct the exercise and sometimes it lets me save, sometimes not. This unable to edit workouts is a known issue, unfortunately. I believe you can disable the auto-detect exercise in either the app settings or the device settings. But then you might have an issue trying to manually log the workout later, say add a walk, as sometimes, manually additions don't save (also a known issue).
