The last 90 days I've had serious syncing issues requiring me to delete BT profile, Delete FitBit app, Reinstall,etc. Updated both the App and the fitbit. Ever since the 24th, I no longer have sleep data or Heart rate info. Paying for Premium. But not for long.

Hi, @Mlt7272 have you checked whether after the re-installation and your updates that your settings are still as before? In particular I would recommend checking whether heart rate tracking has been turned off.
From the clock screen swipe down until you come to the settings menu (gear icon). Tap to open and swipe up to find Heart Rate and confirm that it is turned on. If it is turned on and you still do not have heart rate info please tap to turn it off, wait a moment, and then tap to turn on.
If Heart Rate is turned off you will not get sleep data or heart rate info so that seems the most likely explanation for your issue.
As for sync issues, these are not unusual - though I know they can be frustrating! And they often resolve themselves without any actions. For myself I find the simplest way of forcing a sync is to log out of your Fitbit account and then log back in again. That should force a sync for any device attached to your account and is usually quicker than deleting the app, Bluetooth history and devices etc, but you can find all the suggestions for resolving sync issues here .
