I have a brand new Huawei P Smart 2021, for Christmas, but I can't load the Fitbit app, because it doesn't access the Google Play store....so my Fitbit Charge 2 is absolutely useless...wtf?

This is unfortunately the problem created by Trump Administration with the ban targeting Huawei. You might try to find the APK and sideload it, please make sure to use some reliable sources such as apkmirror dot com.
