You can manage the membership in the Google Play Store or the Apple App Store on your phone.
In the Google Play Store, tap on your profile picture, then Payments & subscriptions, Subscriptions. Select Fitbit and tap Cancel subscription at the bottom.
Not sure of the steps for the Apple App Store.

In this case, I'd like to let you know that if you are signed using a Google account you can visit support.google.com to manage or cancel your Fitbit Premium subscription.
