Purchased a fitbit and the optional 6-month premium subscription. Gift recipient has a different fitbit / Google account than the purchaser, and I cannot locate any guidance on how to transfer or update the subscription so that they may activate and use the premium features.

Thanks for sharing this with me, I'm happy your relative received a Fitbit device. Before anything else, I'd like to clarify with you that once the new device is set up in a Fitbit app, you can activate their trial on their own account. To do this, I'd recommend your relative to try the following steps:
In the Fitbit app, tap the You tab, then tap Try Fitbit Premium.
