I have a first gen Versa special edition, and I have Fitbit premium. I’ve updated my app and my iPhone, and am not seeing sleep score, EOV, or anything I’m supposed to be getting with premium subscription. Please help! I’ve searched the internet to no avail.

Thanks for letting me know that you have a Fitbit Versa and Premium membership. I appreciate that you updated your app and the research done prior to posting.
When you subscribe to Premium, these features will appear on the Discover button of your app. There you'll find guided programs, challenges, workouts and mindfulness.
Regarding your question about EOV and sleep score, you'll get this if your Versa tracked sleep stages the night before. Fitbit estimates your sleep stages using a combination of your movement and heart-rate patterns. When you haven’t moved for about an hour, your tracker or watch assumes that you’re asleep. Learn more about it by checking this article.
If you're not getting sleep stages, please check the scenarios mentioned in this article where you'll see only your sleep pattern and not sleep stages.
