I've had a premium membership for years, and usually, in January, I get an email listing how many steps, total, I did for the year prior. I can't seem to find the one from January 2016 - is there any way to calculate that from my data?

You can do this via the web interface at https://www.fitbit.com/activities

 

Click on "Today" and you can specify a start and end date. It will then show the totals for that time period.
