If you can't find something using the drop down you can create your own foods. Look at the column to the right of where you log your food. Part way down you will see an option to "Create a new food". You can either look at the nutrition label on your food item or look it up on the internet. Add it to the food you have created and then you can search for it next time you eat it.
I don't want to have to create my own when the common food item should be in the Fitbit database.

That's right, that's the way to do it. It may be a bit tedious at first; but over time, within a couple of months, I found the need to add custom items came down to one or two items a month; and now, I can't even remember the last time I had to create one. If the food database included every single item available on the market place, which would keep changing every second, it would quickly become unmanageable and the response time would come down to a crawl.

I found the FitBit food logging isn't my favorite. I simply use MyFitnessPal and link it to my fitbit account. Plus with MyFitnessPal I get free food reports and don't need to pay for fitbit premium or whatever.
