I'm not sure which Fitbit you have, but I have the One and I need to press a button to tell it my sleep is starting, and press it again in the morning to tell it it has ended. My Fitbit therefore has a clue about the activity it's monitoring.
When you do ballet, your Fitbit has no clue about the actual activity you're performing. From its point of view, you could be just as well playing volley-ball. It's far easier to detect movements that exceed a certain threshold (which is basically what your Fitbit is doing during your sleep) than to evaluate an activity that involves random moving around. Don't forget Fitbit is essentially a pedometer, ie. a device designed to count steps when moving more or less in the same direction.
Maybe a heart rate monitor would be more adequate for estimating calories burned during ballet?
