I can see how to get Swimming in to my Fitbit as an activity. But how do I figure out how many calories it burns?

Check the 2011 Complete Compendium of Physical activities, available here. Pick up the swimming type that best matches what you are doing:
Multiply the METS by your BMR per minute and by the length (in minutes) of your activity.
You can find out about your BMR using this online calculator. Divide by 1440 (number of minutes in a day) to obtain your BMR per minute.
Example: my calculated BMR is 1468, so my BMR per minute is 1468 / 1440 = 1.02. If I choose "swimming, leasurely" (6.0 METS) and I do it for 30 minutes, I would burn: 1.02 x 6 x 30 = 184 calories.
