Easy Prep Meals for College Kids

I'm looking for suggestions for some easy prep vegetarian and gluten free meals that I can take to school for lunch. I'm trying to not eat as much processed foods as I used to; but seeing that I'm a full time college student and live with people who arent vegetarian or vegan it gets hard.

Anything you guys have are much appreciated, even if I have to modify them.

I am not a college student but I work full time, have a large house, yard, and dog to care for and I bring lunch to work.   The key is to do prep on Sundays and Wed nights,  I make up a big salad each day and I prep a protein to go with it.  Then all I do is pack it up the night before to eliimate 'forgetting' and eat something I shouldnt.  You can also pack rice with veggies, or veggie chili and heat it up at school. you have to plan ahead,  and keep some emergency foods on hand like cans of vegetarian soup,

@AimeeMarie good luck in your college years. I agree with @Annie-NH yes prep at least 3 large meals when you have the time. When my kids were in college they did that . You'll never be without.

My suggestions would be a breakfast item such as veggie frittata, a lunch supper item as gluten free pasta or (? rice)dish like a casserole i.e. Elbow pasta and beans, or garbanzos. Hummus for snacks, yogurt, etc. suppers could be veggie lasagna, roasted root veggies, eggplant parm.

I'm not a vegan but I hoped I gave you ideas. Happy cooking!

I hear your cry!! Having been in the college/work balance for much too long, I've built a lot of recipes that meet the healthy/cheap/quick trifecta. The only thing is that sometimes they get a bit dull if you're in a HUGE hurry.

Nom Nom Paleo school lunches While many of these have meat, they're easily replaced or omitted in most.

 

Randomly enough, the Uncle Ben's rice pouches are actually not bad if you get the single-serving size.

 

Do you eat tofu/soy/almond meat-replacement products? Do you eat fish or eggs at all, or are you 100% vegan?
