anyone know where I can find a complete list of what the healthy amounts of sodium, calories, protein, carbs etc. are for age and weight?

Not from the FDA, but you may want to have a look at "Dietary Review and Recommendations", by the American Heart Association. They look at things from the point of view of cardiometabolic health, but what’s good for your heart is likely good for your overall health too. The paper is very dense, but well done IMO.
If you want something in a simpler, "digested" format, I can recommend Understanding Healthy Eating, an ebook I’ve mentioned in this other topic as well as in this one. You can listen to the podcasts / watch the videos (referenced in the topics I linked) with Dr. Mike Israetel, one of the co-authors, and you will get a pretty good summary of what the book is about.
