Help!! Meal prep?

I've been totally into meal prepping recently and always prep my lunch from scratch for the week. Before, i would have a belvita breakfast bar or whatever as my breakfast but i'm trying to move on to healthier stuff with less processed foods.

I don't eat as soon as i get up cause i'm generally never hungry, so i like to eat a few hours after i wake up, around 9/10. I'm at work at that time so i need something that i can make at home at the start of the week/night before that isn't too much hassle when i get to work.

Any suggestions?

I have 100 calories worth of fruit and a nutrigrain waffle with syrup every morning. my favorite meal. if you don't want to do the waffle- replace it with scrambled egg whites that you can reheat at work (little spinach, mushroom, tomato- yum) or the 110 calorie bagel thins- love them. Oatmeal is 100 calories per packet- I add syrup and 50 calories worth of fruit or nuts- favorite before work out snack. you can also check out the veggie sausages in the frozen section. processed- but not meat based and no fillers and yummy.

I used to get SO overwhelmed by the idea of meal planning for a whole week. My husband works evenings (3p-12a), I work 8-5p, so I'm pretty much on my own when it comes to prepping my lunches/dinners. I find that trying to put together actual recipes during the work week is too cumbersome. So I have my husband do the weekly shopping (hello, grocery shopping at midnight = no people!) that is basically just "components" that I like. Sweet potatoes/quinoa for carbs, lean proteins (I prefer to freeze, as I don't want to waste any meat I don't make fast enough) like chicken breasts/tilapia/pork tenderloin/etc, and a few fresh veggies that hold up well in the microwave (my faves are kale and cauliflower). On Sunday, I do a prepathon - cube up 3-4 sweet potatoes, roast in oven; roast cauliflower (add seasoning); saute kale (a like it with a little sesame oil and soy sauce); cook some chicken breasts to put in little baggies. Then during the week I put together whatever combo I need to get my calorie goal (or close anyway, I'm super active all day), microwave and eat. Not the most amazing meals ever, but it gets the job done during the work week without the stress. 🙂
