Hey friends, I need some help here!
This is the thing, I have crazy and busy mornings, getting ready for work, getting my 3-year old ready for Day Care & preparing lunch boxes, so I do not pay too much attention to my own breakfast. I found myself drinking a cup of coffee with some cookies and that's all.
Please, I need some quick and healthy breakfast ideas!

Fruit and Nut Oatmeal
We precook our steel cut oatmeal to make Irish oatmeal but you can use instant, just check the sodium on the package. You can also make this ahead of time and freeze in muffin/cupcake tins, sotre the "puck in ziplock bags so you can just grab and reheat in the microwave.
1 cup cooked oatmeal
1 small scoop or 1/2 lg scoop of Vanilla Protein Powder.
(I prefer Biotrust Vanilla Low Carb or if I am out, Jay Robb Egg White Protein Powder)
1/2 to 1 cup unsweetened apple sauce
1-2 Tbs Agave ( make sure it is 100%)
no more than 1/8 cup of dried fruits OR 3/4 cup fresh fruit
ie dates, cranberries, strawberries, banana, apples, pears, blueberries, ect...
1-2 T crushed unsalted nuts, preferably natural, ie pecans, almonds, hazelnuts
sometimes as a treat, I will use pecan pralines
Spice blends: I prefer Apple Pie spice or Pumkin spice, but you can also pick and choose individual spices if you don't like or don't want a particular spice.
Cinnamon, Cardamom, Allspice, Nutmeg, Ginger, ect... even vanilla, maple or almond flavoring.
Try a different combo every day!

I start just about every day with a plantbased protein shake. I really don't like breakfast so these have been a lifesaver for me. Plus they are great for kids. Kids love smoothies 🙂

I have this for an afternoon snack everyday, but it would be good as a breakfast too.
I buy the large containers of Vanilla Greek yogurt. Divide into five containers. Add fresh (my fav) or frozen berries. In five smaller containers or snack size ziplock bags, put nuts and seeds mix. I make my own mix from all different kinds of raw (healthier) nuts and seeds like walnuts, almonds, pepitas, sunflower, cashews, etc. I also add dried goji berries (check with your Dr. if you're on any medications) and raisens for sweeteness. I buy all of this in bulk and make enough to last a month or two. I store in an air tight container. I put about 1/3 cup into each small bag. In the morning you would grab one yogurt and one nut mixture and add the nuts to the yogurt just before eating to preserve the crunch. Very filling. Very fast. Lots of protein. Portable.

Prep is everything,
I go for spinach, cold hard boiled eggs and smoked salmon three days a week and either All-Bran or Weetabix Protein two days a week with something a little fancier at the weekend. Breakfast is the most important way to start your day so it's great to change it up.

It sounds boring, but I simply fry an egg or two with my coffee in the mornings.
I can get my (very small personal-sized saute) pan warm over medium heat while making the coffee, then drop in the eggs and wander for a few minutes (usually long enough to water plants, feed animals, throw hair into a pony, or another very small task) then go back and flip, do another small task, throw it on a plate, and consume.
If I know lunch will be late, I leave the egg(s) runny and throw onto a piece of whole wheat toast....if I have tomato, spinach, or avocado on hand, I add these to the toast too.
Sometimes I get ambitious over the weekend and make up overnight oats or a batch of breakfast burritos to freeze and microwave... but if I haven't done my weekend prep, eggs are the old standby for me.

On weekends, I make omlettes or quiches using up any leftover salad veggies and/or meat that I didn't consume during the week for lunches.
It works great because they are already cleaned and roughly chopped, so I just have to lay them out on a cutting board and haphazzardly chop them into smaller bits for this in a few seconds. Also, the veggies aren't at risk of spoiling this way, because I know anything unused will be weekend breakfast!
...Too many veggies for a single breakfast? I just make extras and put them in the fridge for reheating on those busy weekdays - have heard you can freeze too, but haven't tried it.

I just posted on this thread about breakfasts that I love to eat bananas in the morning as they boost my energy because of the potassium it gives me! haha make sure to check that thread as well, you may find some other great ideas for healthy breakfasts!

Lately I've been having a bowl of cereal (love my Fiber One cereal!) and a banana at home, and I take greek yogurt to work with me to eat around 9 or 10 am. I love eggs with some shredded cheese on top, but for some reason I can NOT eat them right when waking up. It literally makes me want to vomit, but I can eat them if I've been up for an hour or two. It's weird.
I make a really good quesadilla quiche. I discovered it when I was doing low carb and it's so delicious I still make it even though I don't do low carb anymore.
The recipe is:
6 eggs
1/2 cup Rotel diced tomatos/chiles
1/2 cup heavy whipping cream
8 ounces shredded cheese (I use Colby/Montery Jack)
Whisk eggs and heavy whipping cream together, then combine Rotel tomatoes and cheese in a pie baking dish. Pour in egg and cream mixture and mix together well. Bake at 350 for 35 minutes or until done. I divide it into 8 servings and it's 218 calories, 18g fat, 163mg sodium, 12g protein, 2g carbs per slice. I think I'm going to substitute almond milk for the heavy whipping cream next time I make it since I don't need the high fat anymore. But the quiche is actually really good with a little bit a taco sauce on top. 😄

A really good breakfast is Granola and yoghurt. Granola is oats and raisins and walnuts. Its really tasty and healthy.

Hey, @E.R.K.2006! Indeed very tasty and easy to make! Have you tried to put some Chia and fruits on it?
It is delicious and it gives you a sensation of fullness.
