You might find that there's a lot of delicious flavor in veggies when they've been cookied in certain ways. The trick is searing/carmelizing a bit of the vegetables. Try roasting or sauteeing, and aim to have a bit of golden brown on the outside. The following tips might help toward that end:

Here are some ideas (yes, I realize some of these are botanically fruits):
-veggie smoothies. Get greens + and add to your protein shakes
-pizza salads! Pineapple; tomatoes; olives etc. with pizza sauce
-stir fry! beansprouts, black bean sauce, waterchestnuts
-make air popped popcorn. Lower cal, higher in fibre
-try a new veggie every week; you might hate cooked aspargus, but love cooked eggplant
-cooked cauliflower. Mash it. Add a little olive oil and sea salt and lemon juice. Mmmm
-grilled carrots
-try grilling lots of veggies and find a really tasty sauce!
-if you like tomato sauce, blend up zucchini, garlic etc. and 'disguise' in the sauce
Invest in a Ninja! Best decision I've ever made. I throw in Spinach and Pineapple usually into a blender and drink one or two smoothies per day. Any blender works just as well, but I like using the personal serving shakers they offer when I'm on the go. Definitely has helped changed my diet for the better
Best AnswerSearch out new recipes. It may be that you just don't like these vegetables the way they've been served to you previously. I like to search on Pinterest and see what's out there. Try steaming the veggies, stirfrying them or mixing them up into a casserole. One thing I like to do is cut up peppers and scallions and whatever other veggies I have around and add them to spaghetti. Today I wrapped fish in bok choi and steamed it.
There are also probably vegetables you haven't tried. Make it a goal to try a new one each week. I have really tried hard to expand my food repetoire. I have "discovered" parsnips, acorn squash and swiss chard, among others.
