I'm going to try this recipe for a pizza crust. It is called "oopsie bread."
3 eggs
100 grams cream cheese (about 3.5 oz or almost half an 8 oz brick)
Pinch salt
1/2 tablespoon fiber husk (psyllium), optional but gives a more bread like appearance and adds fiber
1/2 teaspoon baking powder, optional but give the product more air holes
Separate eggs, beat egg whites in one bowl until very stiff. Beat egg yolks in a separate bowl with cream cheese and optional fiber husk and baking powder. Very gently stir stiff egg whites into yolk batter. Spoon 6 large circles onto a large baking sheet. Bake at 300F (150C) for about 25 min until golden.
I haven't tried this recipe but it is a standard "low carb bread" recipe. Since it relies on the air bubbles in the beaten egg whites to have loft, I think it would be wise to add the pizza toppings after it bakes and use fully cooked toppings so that the product is only heating up in the oven rather than baking for another 20 minutes.
I have tried this recipe and it is amazing. One of the big complaints is usually that the crust is bland or that its floppy. This recipe has neither of those issues. Its yummy!

Do you know the nutritional info on this recipe? I'm on the Keto diet and need to know the ratios of carbs/fats/proteins. Thanks so much!
Best AnswerHi Suz.
The recipe (from my husband's doctor) did not include nutritional content, but I plugged all the ingredients into the fitbit food log and here is how they shake out, according to fitbit. For a recipe with 3 eggs, 100 g cream cheese, "pinch" (I entered 1/16) tsp salt, , 1/2 T psyllium, and 1/2 tsp baking powder ...
606 calories
26.9 g protein (17%)
14.7 g carbs (9%)
50.6 g fat (74%)
6 g fiber
998.4 mg sodium
If you divide that recipe into SIX servings ... then the micronutrients per serving are
101 calories
4.5 g protein
2.5 g carbs
8.4 g fat
1 g fiber
266.4 mg salt
The carbs mostly come from the eggs and the optional psyllium. If you took out the psyllium it would have one less carb per serving.
Hope this helps
Post and let us know what you thjink. I tried oopsie bread for burgers and I was not impressed at all...
Best AnswerHello LCHFmom!
I posted that oopsie bread recipe (it came from my husband's doctor) before I had tested it. I didn't like it much either. I ate one while it was warm but the rest sat there until my husband threw them out. I added some high gluten powder (mostly protein) hoping that would give them a little doughy-ness but they pretty much tasted like bland, overwhipped eggs. I guess I will try that cauliflower pizza crust recipe someone posted instead.
Best AnswerThere is a great one that uses either grated zuchinni, spahetti squash or cooked and mashed cauliflower mixed w/ 2 eggs and mozerella cheese. I take a little over 2 ounces of the mixture and make 7 individual pizzas. I bake for 15-20 miniutes, remove from the oven and then top with tons of veggies, tomatos, mushrooms, green peppers, green onions and parm cheese and then bake again for 20-25 minutes. They freeze very well and are great for a quick and easy low-carb lunch. Just reheat in the microwave!
I just tried this cauliflower crust recipe.

topping:
1/2 cup mozzarella
1/2 cup homemade pizza sauce
20 slices pepperoni
I had half the pizza.
Cal: 317
Carbs: 6g
Fat: 21g
Protein: 24g
Thanks, but I don't do processed meats! My recipe that I posted has tons of protein and lots of veggies (organic) and nothing artificial!
Best AnswerYes I made it this past weekend and my Husband and I loved it. I put Mushroom and used goat cheese and very sliced peppers. I would make it again. We had it with baked chicken and a salad. Good dinner. I will make it again. Keep on stepping. Your fitbit Friend
Best Answerthere is a product by a company called Jullian bakery that makes Paleo Pizza Dough Mix. I havent tried it but if you look for it on amazon its rated pretty highly. Paleo means not grains at all so it probably has some of the following: arrorwroot powder, coconut flour, almond flour, etc. should be pretty low carb.
Best Answerjust an FYI - if you're ever in Chicago, Lou Malnati's makes a crustless pizza. basically, the base is just a big sausage patty. on top is the sauce, cheese and other toppings. delicious! an entire medium, crustless pizza has 22g of carbs (assuming just a cheese pizza - sausage base, sauce and cheese).
if you're eating low carb, it doesn't seem to hinder weight loss. i'm pretty sure i'm the first person to ever visit the midwest and LOSE weight. i was in chicago for 12 days and still managed to lose 2 lbs. and, i still managed to partake of all my favorites - pizza, hot dogs, italian beef and white castle. the first 3 were obviously without the crust/bun. i splurged a bit on the white castle and had them stack 4 meat patties on one bun (12g of carb).
