I thought I would share what I'm making in the crock pot right now - it's super heatlhy, very filling and totally delicious!!
1 lb of ground turkey (browned)
2 cans of corn
1 can red beans
1 can white beans
1 can black beans
1 can diced tomatoes
2 cans diced green chilies
1 packet ranch dressing mix
1 packet of mild taco seasoning
1 packet of hot taco seasoning
Dump all ingredients in the slow cooker (do not drain any of the cans) and cook on low for 8 hours
Garnish as desired with 2% Mexican blend cheese, Light sour cream, baked tortilla chips
Often I like to rinse my beans before cooking them....
Is this a thick soup when done?
Best AnswerFor this I just dump the whole can in.. the liquid in the soup comes from the contents of the cans. If you like to rinse first, you'd need to add water to the soup instead. As is, it comes out pretty thick... more like a stew. You can add more water if you'd like it more "soupy".
Best AnswerI tried the taco soup this past Saturday. It was delicious!! More of a chili instead of a soup.
I did modify the recipe though... when I went to go make the soup I realized that I didn't have the ranch packet. It must of gotten lost in the basket or fell out of my bag and never made it home. I ended up using a "salad blends" herb mix with parsley, onion, dill and garlic.

Best AnswerNo idea on the calories unfortunately... anyone want to have a go at it? I figure a cup should be about one serving, but I have never measured to see how many cups the entire batch yields.
